This week our guest is John Stage, the founder of Dinosaur BBQ, a northeastern BBQ chain serving southern southern-style meats and draft brews with some of the best brisket and ribs around. The iconic Syracuse location opened in 1988 after John got his first taste of southern-style BBQ, which he would craft and continually perfect over the next three decades and several locations later.

Throughout the episode, we discuss what it takes to create both a unique restaurant with so much character and a menu that is loved by many. We dive into Dinosaur's past, present, and future, outlining the risks involved when taking outside capital and the steps needed to carry on the vision that made Dinosaur BBQ what it is today.
